Fish in a bag With lemon, cherry tomatoes and white wine
02:36Last night I had a rather yummy dinner which tasted great and took under 40 minutes to prepare and cook. It was quite rich and had lots of strong lemon flavour, the cherry tomatoes mixes well with the white wine and creates a really nice sauce.
This is my adapted version of Fish in a bag, you can add fennel & olives to this dish however I decided not to add them as i'm not a huge fan.
- ½ lemon, finely sliced
- 5 cherry tomatoes, halved
- 1 drizzle olive oil
- 120 g firm fish fillet, such as haddock, halibut or salmon, (i used haddock).
- sea salt
- freshly ground black pepper
- 1 splash white wine
It's so simple, you can either make a foil pouch or if you have any fish cook bags these are also perfect.
Simply add all the ingredients together in a bowl except the white wine, give it a good gentle mix.
Add these to the bag with the white wine and seal.
I set my oven to 175ºC as it is a fan oven, however may need to adjust this accordingly to suit yours. It was placed in there for 20 minutes.
I served this with a lovely crisp baby leaf salad and new potatoes, perfect.
